TACO SOUP

2 T. olive oil (IF USING VEGGIE MEAT INSTEAD OF HAMBURGER)
1 pound ground beef or turkey OR 1 pkg. Morningstar Crumbles
1 medium onion, chopped
1 16oz can chili beans, undrained
1 15oz can kidney beans, undrained
1 15oz can whole kernal corn OR 1 cup frozen corn (CAN OMIT, but it's yummy!)
1 can tomato soup, undiluted
2 cups water
2 14.5oz cans peeled and diced tomatoes (I puree them)
1 4.5oz can diced green chiles
1 small can sliced olives
1 1.25oz envelope taco seasoning
2 t. chili powder OR to taste if you like it spicier
2 t. Splenda

In large saucepan/stock pot saute beef or turkey OR veggie meat and onions over medium heat until browned. Drain. (You don't need to drain the olive oil if using veggie meat).

Return to pan and add remaining ingredients. Let simmer uncovered for 2-3 hours, stirring occasionally. The longer it simmers the better it gets!!

I serve with a pile of cheese on top and a dollop of sour cream, diced tomatoes and avodcados. SUPER FILLING AND YUMMY!!

12 servings (about 1 cup each) 241 calories, 13 protein, 25 carbs, 11 fat, 6 fiber, 800 sodium

1/2 cup WLS serving - 120 calories, 6 protein, 12 carbs, 5 fat, 3 fiber, 400 sodium


-I use low sodium products when possible to lower the sodium content. I also freeze small containers of this so I always have something ggod for me & easy on hand.
