Hi All!

Several people have called me to ask about recipes for gastric bypass patients. I had seen this cookbook advertised on a web page in the past, and I believe a few of our support group members have tried it. Here is the link to the cookbook:

Thanks Nanette for the information on the cookbook.

I think I am going to go back to all the newsletters and start to copy the recipes off them. I am going to post them here. Maybe that will help some people when planning their meal.

I think that's a great idea. Maybe we can get a few people to post that foods that worked for them at different stages.

ie: Stage 3-
Italian Mush
1 c. ricotta cheese
1 egg
1/4-1/2 c. marinara sauce (whatever kind you like)
shredded mozzerella cheese to taste

Combine cheeses and egg. Pour sauce into a small baking dish. Add cheese mixture. Sprinkle a little extra shredded mozzerella over mixture and bake at 350 until bubbly. Tastes like the "good part" of lasagna!!

CHOCOLATE PEANUT BUTTER CUP

Ingredients:

1/2 cup of skim milk
1 scoop of chocolate protein powder
1tsp. of creamy peanut butter
4 ice cubes

Directions:

put all ingredients into the blender. Blend on high for 45 seconds

Calories - 175
Protein - 24 grams
Fat - 5 grams
Sodium - 128mg.
Calcium - 276mg.

WILD WEDGES

Ingredients:

2 (8inch) Fat-free tortillas
Nonstick cooking spray
1/3 cup shredded reduced -fat Cheddar cheese
1/3 cup chopped chicken or Turkey
1 green onion, thinly sliced (about 1/4 cup)
2 tablespoons mild, thick and chunky salsa

Directions:

Heat large non-stick skillet over medium heat until hot
Spray one side of tortilla with nonstick cooking spray; place sprayed side down in skillet. Top with cheese, chicken, green onion and salsa. Place remaining tortilla over mixture; spray with non-stick cooking spray.
Cook 2 to 3 minutes per side or until golden brown and cheese is melted. Cut into 8 triangles.

Variation

For bean quesadillas, omit the chicken and spread 1/3 cup canned fat free refried beans over one of the tortillas. Can also use low carb wraps instead of the flour tortillas to reduce the carbs even lower.

Revolutionary Montreal Salmon Rub
Low Carbohydrate Low Calorie Low Sodium

Ingredients:

2 teaspoons McCormick® Grill Mates® Montreal Steak Seasoning
2 teaspoons grated lemon peel
1/2 teaspoon McCormick® Dill Weed
2 pounds salmon fillet

Directions:

1. Heat grill to medium heat. Blend Montreal steak seasoning, lemon peel and dill weed. Rub mixture over salmon. Allow to stand 5 minutes.
2. Place salmon, skin side down, on grill. Cook 8-10 minutes per inch of thickness (without turning) or until fish flakes easily with a fork.

Protein Drinks Freeze

Some one at our August meeting suggested this recipe:
Take protein drinks pour into plastic ice pop molds and freeze.
Then you can eat these in between meals to get our protein.

Banana Cream Dream


1 pkg. Vanilla sugar free instant pudding
2 cups 1% or skim milk
1 scoop vanilla protein powder
2 medium bananas
Fat Free non-dairy whipped topping

Mix pudding according to instructions with milk, adding protein powder as you mix. Slice bananas, add to pudding mixture. Place in Fridge to set (doesn't take too long!!)

Spoon pudding into parfait glasses, layering with whipped topping. Also can be put in a pie shell, or anything else you can think of! It's easy, quick and the best part is you're getting a good dose of protein, the potassium and vitamins from the bananas, and hardly any calories and SUGAR!!!
