LENTIL STEW
1 lb. Lentils
6 cups vegetable stock
1 large can diced tomatoes
1 medium onion (chopped)
1 tablespoon chopped garlic
½ cup fresh chopped dill
6-8 medium potatoes (peeled and cubed)
½ lb baby carrots (sliced or whole)
Salt and pepper to taste
• Rinse lentils in colander under cold water (If using red lentils watch out for red rocks and remove them.) I like Goya lentils as they tend to be cleaner to start with.
• In a large soup pot add first six ingredients.
• Bring to boil stirring occasionally.
• Reduce heat to medium and continue to cook for one hour.
• Add potatoes and carrots. Continue to simmer on medium stirring occasionally for one hour.
Or
Before work add all ingredients to a large crock pot and cook on low for at least 8 hours. When you come home not only will dinner be done, but your house will smell wonderful to boot!
BONUS: This is great for the soft food stage post-op or served over rice. Lentils are a good source of protein. Also freezes well for quick lunches and dinners!
