View Full Version : Recipe of the Week - Tuna steaks with mashed Cauliflower and green beans

Since I got a bit of flack for not posting a recipe in a couple of weeks I thought I'd make it up to everybody with a full meal that serves 4 (and a bariatric surgery patient.) This one is nice for Good Friday, Easter or any other day.

Tuna Teriyaki
• 1 pound tuna steaks
• ½ bottle Lawery’s Teriyaki Marinade
• ½ cup water

Place tuna steaks in a bowl.
Cover with marinade.
Marinade for at least 1 hour.
Reserve marinade.
Grill tuna steaks for 5 minutes on each side or until just done. Medium rare goes down best in my experience.
Add ½ cup of water to marinade and microwave on high for 2 minutes.
Serve sliced and drizzled with marinade.

Mashed Cauliflower
• 1 head of cauliflower
• ¼ cup skim milk
• ¼ cup fat free sour cream
• ¼ cup parmesan cheese

Clean cauliflower leaving only the white flesh.
Cut into head into eighths.
Steam for 30 minutes.
Place steamed cauliflower, skim milk, parmesan and sour cream into food processor.
Process until smooth.

Fresh Green Bean Sauté
• 1 pound fresh green beans
• 1 clove of garlic minced or 1 teaspoon minced garlic from a jar
• 1 teaspoon olive oil

Clean green beans by removing ends and rinsing well.
Steam for 5 minutes.
Brush a heavy non-stick skillet with olive oil.
Add garlic and green beans.
Sauté on medium heat for 5 minutes until garlic is slightly brown.
