1 pound large Sea Scallops
8 cloves of garlic
3/4 cups white wine
1/4 cup fresh parsley
Olive oil cooking spray
1 - 2 cups skim milk
Salt and pepper to taste
- Soak scallops in milk for at least an hour
- Cut scallops in half horizontally
- Mince garlic
- Spray large fry pan with olive oil cooking spray
- Heat on medium high until hot not smoking
- Add scallops and sprinkle with garlic
- brown scallops on both sides while scraping the garlic to avoid burning
- remove scallops from pan, place on a serving dish and keep warm
- Deglaze the pan with the white wine
- Add parsley and continue to cook for 5 minutes
- Drizzle sauce over scallops and enjoy!
