Shrimp Chowder

1 cup frozen cauliflower
cooking spray
1/4 cup chopped onion
1 teaspoon chopped garlic
1 oz. fat free ham (deli)
1/4 teaspoon lemon-pepper
1- 8 oz. bottle clam juice
1- cup evaporated fat free milk
1/2 pound large shrimp (cleaned)

- Place cauliflower in a microwave safe bowl with 1 cup of water. Cover with paper towel and microwave on high for 4 minutes or untill cauliflower is soft.

- Coat bottom of soup pot with cooking spray and cook onions and garlic over medium heat for 2 minutes or until soft, but not brown.

- Add ham, lemon-pepper, evaporated milk and half the clam juice. Cook stirring constantly until just barely boiling. Reduce heat and continue to simmer for 5 minutes, stirring occasionally.

- Puree 1/2 cauliflower with remaining clam juice until smooth. Chop remaining.

- Add cauliflower to soup mixture and continue to cook for 5 minutes.

- Add cleaned shrimp (may be chopped depending on your tolerance to food consistancy.) Stir for 30 seconds and remove from heat. Shrimp will continue to cook in hot soup.

- Add salt and pepper to taste.
